Creating A Delicious Dessert Fit For Spring!

One of the yummiest desserts I’ve created in a long long time! Last week I showed you the dinner I made, well now this is the dessert that followed it.

It’s Adrian’s Berry, Ginger and Chilli suprise!

Ok, I will admit – it was the first time I made it, and it turned out perfectly. My guest, the fabulous Faye De Lanty loved it! She even had seconds!! (Sorry Faye!)

I’d love for you to try it at home and impress your guests – or simply just yourself.

Ingredients:

- Mixed fresh berries; I used blueberries, cherries, strawberries and Longans

- 1 whole red chilli

- Ginger (size of a small mushroom)

- Icecream; ideally use English Toffee

- Lime

- 100gm brown sugar

- Whiskey

Method:

1. Using a pot or saucepan, bring only a small amount of water to the boil (about 100mls).

2. Add the freshly sliced chilli (without the seeds), sliced ginger and half the lime, sliced.

3. Let this simmer for about 5 minutes, don’t let all the water evaporate as you will need some in there for the sugar.

4. Add the brown sugar and stir in till it is all caramelised, but don’t cook for too long or you’ll burn the sugar.

5. Pour into little serving dishes, serperate to the icecream and berries.

5. Put the fresh berries and scoops of icecream into a bowl and add a splash of Whiskey to the top of it (or port, red wine, anything you like!)

6. Serve everything together and pour the hot chilli and ginger sugar over the berries and icecream. Squeeze a little bit of lime over the top.

DELICIOUS.

Tip: Do not use frozen berries! They are a crime, no matter what you use them for!
