Wine Without BS Makes Homemade Sparkling Red Wine!

Say what? How can I make my own sparkling wine at home, I hear you say. We’ll thanks to a little inspiration from world famous Chef, Heston Blumenthal, and an episode of Heston’s Feasts, where he used the 1980’s as a theme – the well known kitchen gadget, the Soda Stream, was used to sparkle up some cheap white wine that Londoners struggled to pick out when tasted blind against a true Champagne.

Preferring sparkling reds over whites personally, and seeing new Soda Stream machines in my local supermarket, the idea of making my own sparkling red wine was born.

What you will need

A Soda steam machine ($69 from the soft drink section of Woolworths)


1 x 750Ml bottle of chilled, full bodied red wine. Or indeed any wine you wish to try as a sparkling wine.

AND

50 – 100Ml of fortified red wine such as ruby port

(Vary the amount of the fortified wine to your preference for sweetness. The more you add the sweeter the wine will be)

How to make the magic happen!

Pour the entire bottle of red wine into the Soda Stream bottle

Add the chosen dosage of Fortified wine

Tip! Screw on the bottle cap and gently mix the two wines together prior to attaching to the Soda Stream Machine

Screw the Soda Stream bottle into the machine

Push the button at the top of the machine three times to properly carbonate the wine , pausing in-between each press so that the liquid does not overflow.

Tip! Wait a minute or so before unscrewing the bottle from the machine and do this slowly to avoid the wine spilling out the top.

Pour into a glass and enjoy!

Further Tips and Hints

1. A naturally sweeter red wine will work best and, in some cases, may require little to no addition of the fortified wine. My favourite combination to date was a Barossa Shiraz/Grenache with 70Ml of the Fortified wine. I am also highly confident that the MDV Wines 08 Grenache would work an absolute treat and not require any addition of fortified wine at all. (http://www.mdvwines.com.au/wines.asp)

2. Do not make the same mistake I did when buying the port and fail to see the word “Tawny”. Tawny port simply won’t give you a well integrated flavour. Trust me… I tried it!

3. Maximum results are achieved when the liquid reaches the fill line on the bottle, which unfortunately  a 750ML of red wine plus the 100Ml of fortified wine does not . The  current machines come with 1L bottles but I believe the older Soda Stream machines were around 750ML bottles so you wouldn’t have this problem. With a smaller bottle you would even have to reduce the amount of wine and adjust the dosage of fortified wine so as not to over sweeten the wine.

Using the new 1 Litre bottles there are a few ways you could get around this problem:

a) Use more than one bottle of red wine to top up the liquid to the fill line (this may require slight adjustment of the amount of fortified wine as well)
b) Simply add fortified wine until the fill line is reached. This will result in a fairly sweet wine but some people may actually prefer this.
c) Put something, approximately 100ML or so, in volume into the Soda Stream bottle to begin with that will not change or taint the taste of the wine in anyway way and will ensure that the 850ML in the bottle will reach the fill line. Examples I thought of were: glass marbles; Ice blocks still in their plastic wrapping; Mars bar  still in its wrapping; or probably the most ideal, Whiskey stones (
see here)

Why this isn’t as silly as some may suggest

  • While I am not suggesting this will ever be as good as a true, naturally fermented sparkling red, when carbonated properly and consumed straight away you may be surprised how close it comes. I know one winemaker who blind taste tested it was!
  • It’s 42 degrees (celsius) outside as I am typing this, so should I prefer a red wine over a white wine later on as don’t have any proper sparkling red available, it’s a viable option for a cool, refreshing beverage if you have the equipment and wine required.
  • You can experiment with different wines that are not usually made into sparkling wines e.g Tempranillo, Pinot Noir, Zinfandel, Sangiovese, Barbera… the list is almost endless as you do this with absolutely any wine that you choose, including white wines, Rosé or even desert wines!
  • It’s fun and that’s what wine should be. Sure, a few winemakers and others may think it is sacrilege that their finely crafted wines are being ‘ruined’ by being carbonated when they were made as still wines, but if you are enjoying them this way, then do it. It’s your wine!

The main thing is that you’re enjoying wine and having fun… and that’s No BS!

Salvagno Extra Virgin Olive Oil

Being a typical Spaniard, when I cook, I love to use Extra Virgin Olive Oil. The more, the better. It’s almost disgusting how much I use! But I love it.

I’m fussy with the Extra Virgin Olive Oils I use too, so lately I have really only been using one brand, Salvagno – an Italian family company from the Venetian Hill, Lake Garda.

It’s a delicate and sweet, perfectly blended with four mono-varietal oils. It’s versatile and you an use it with anything you would normal use olive oils. Because of it’s delicate flavour, I like to use it on foods that the taste can be distinguished, like salads and garlic prawns.

Noble Wine Of The Week – Mitchell Harris Sauvignon Blanc Fumé

If I had planned ahead and realised that this week would be my last review for the year I may have chosen differently, however, I would certainly not wish to take away anything from this great wine, from Victorian producer, Mitchell Harris. Sauvingnon Blanc is still, to my knowledge, the largest selling white wine in Australia and the bulk of sales are of examples from New Zealand. It is a pleasure then to announce that this wine is right amongst the best Sauvignon Blancs I’ve experienced this year and beyond. Fumé, for those unfamiliar with the term, means this Sauvignon Blanc has spent some time in oak barrels, six months to be exact for this particular vintage.

This wine has a light colour and has aromas of tropical fruits and citrus. It has a lovely flavour and despite its oak treatment the regular wine drinker, myself included, won’t notice this in the flavour. It has hints of lime on the palate but citrus is far from dominant. Very drinkable with or without food.

Final Sip - An overall great white wine that is most definitely an example of a Sauvignon Blanc I’d take over the vast majority of the typical, non Fumé, styles. Patriotism aside, I’d buy this wine over other Australian Sauvignon Blancs as well as the hugely popular ones from across the Tasman.

Noble Wine Of The Week – Primo Estate Pinot Grigio

Still very much on the trail of great wines for summer I recently commented that Pinot Gris is considered an ‘In fashion’ wine this summer. What I forgot to mention is that Pinot Grigio is exactly the same grape variety and hence has to be just as fashionable with Gris being the French term and Grigio the Italian name. No surprises then that Primo Estate founders, the Grilli family, migrated from Italy and their wines often incorporate Italian wine making techniques learnt and passed down by founder, Primo Grilli, to his son and now head winemaker/owner, Joseph.

Named after Joseph’s daughter, whose birth in 1998 coincided with the planting of the vineyard used for growing Pinot Grigio, this wine has a classic pale straw like colour and an intriguing aroma. On the palate the wine sits somewhere between savoury and fruity and just so full of flavour it is one of the few Pinot Grigio’s I find tasty enough on its own, while always remaining a style made to enjoy with food.

Final Sip - I adore this wine and so does pretty much everyone I’ve introduced it to. Easily one of the better Pinot Grigio’s I’ve had to date and even more impressively earns a spot on my all time favourite white wines list!

Oh hang on… I am at The Cullen Hotel in Prahran, Melbourne right now enjoying the complete fabulousness of this place!

I once would only stay at a 5 star hotel right in the heart of Melbourne every time I’d visit, till I finally thought I’d try something a little different outside of the city, in the heart of the trendy, slightly bohemian yet up-market Prahran.

I’d drive past The Cullen as it was being built only a couple of years ago, wondering what the monstrosity across the road from the Prahran markets would be. What was being built was an artistic, luxurious, warm, welcoming and eccentrically designed hotel which was featured in the 2010 Condé Nast Traveller US Hot List.

The entire hotel is inspired by the artwork of Adam Cullen. Bright, colourful and peculiar is what you could describe the artwork and the imagination of this talented man. Adam Cullen combines irreverent humour with an astute sensitivity to society.

From the moment I walk through the glass doors, past the two life sized Adam Cullen mosaic cows in the foyer, I realise I am somewhere a little different. A little quirky. A little fearless. Perfectly me.

There is an immediate presence of homely calm. The casual, but very professional staff are just so welcoming. They are young, vibrant, experienced and will do anything to make your stay pleasurable. Each time I have been, I couldn’t have asked for a bunch of nicer people to look after me – it’s really helped make a home away from home for me, especially as I travel so much.

Check-in is easy and quick which is important to me as I normally arrive and just want to get in, drop my bags, have a shower and relax.

The foyer, the void from the top and all the corridors on each floor are covered in fabulous wallpapers and the original artworks of Adam Cullen. The artworks continue on through to the luxury guest suites.

When you open the door to your room, you automatically smile. It’s a bright, happy and pleasant space. It’s clever, sophisticated and designed in the most amazing way to take advantage of space and light and make you feel completely fabulous.

The bathroom is a standout feature for me. Obscured decals with Adam Cullen’s famous Ned Kelly  cover the giant glass walls to the bathroom, creating a sense of discreet and legalised voyeurism with just vague silhouettes showing through. The stunning glossy black mirrored floor tiles, use of mirrors and the large open shower (or bath/spa depending on the room you get) make your time spent in the bathroom pleasurable. Excellent Art Series products are plentiful for your skin, hair, etc.

Luxurious spotless, black carpet lines the floor, crisp white walls and plenty of colourful Adam Cullen paintings line the walls, along with a wall mounted LCD with Foxtel and floor to ceiling mirrors. A fully served kitchenette and dining table complete with Kartell chairs, side tables and lamps. A small library in each room provides hours of colourful reading with books on the art of Adam Cullen, architecture and design.

An iPod docking station is also in every room which is great for me, as I need music everywhere I go, and also have an iPhone and can charge and listen to my favourite songs up loud!

The hotel has everything you need – valet parking, hair salon, gymnasium, Nintendo Wii hire, internet and downstairs there is the famous HuTong Dumpling Bar which is a hot spot for Melbourne locals to dine. If you haven’t already hired a car, hire one of The Cullen’s Smart Cars! Or if you feeling like keeping fit and getting some fresh air, hire a Swedish Kronan bicycle.

The beds are super sumptuous and provide an amazing sleep, while being cocooned in the luxurious Art Series Signature linen.

I love everything about this hotel. The service is impeccable. The class in second to none. The design is divine. The price is right and the location is perfect. If there was somewhere you were going to stay in Melbourne, this would have to be it.

This is where I’d rather be… And I am.

London Fashion Week – The Designers – Holly Fulton

OTT texture, glamour and graphic prints is what Holly Fulton is bringing to SS11. Cracked desert prints mixed amongst a very mod and tribal feel made this show a stand out for me.

As Holly says RELAX she shows us that matchy matchy is the way with identical print shorts and oversized clutch pieces making a serious statement this summer. But keep it carefree as we see lots of eyelets and perforated patterns coming through an otherwise well put together range.

Fulton, in her quirky accessories also plays with the silhouette of Fran Fine’s (The Nanny) make up suitcase as she adapts then into everyday handbags.

My fave look of the show was the black wide leg silk trousers, taupe strapless silk jersey top, neckpiece and sunglasses – I will totally be rocking this in summer!

Josh & Louis – L’originale Collection

As I’ve mentioned before, my apartment is a mix of a few different styles, including modern, Rococo and French Provincial.

I’m always on the search for a stand-out piece, and I think I’ve found the perfect piece for my bedroom.

This is the Josh & Louis L’originale Salon Chair is the first of the first of the collection, inspired by the opulence of Rococo and King Louis XV charm. The bright colours bring out the modernity and character of today, but still showing the eccentricity of Kings and Queens that would have once had their dramatic bottoms placed firmly in them.

The detailed frame is hand-carved Mahogany finished with a glass-like lacquer. The upholstery is Italian leather, of course of the finest grade, and it is bordered with nickel coated studding. They are comfortable and supportive, thanks to the webbed and sprung base.

They are a real collectors item, they are beautiful, they are comfortable and they are definitely the perfect piece for my eccentric taste in my eccentric bedroom!

Food Is Life With Samson Foods

I agree with Samson Foods. Food Is Life.

One of my favourite quotes which I made up (well I think I did?), “Life without enjoying food isn’t a life enjoyed”. I am a true believer of this. We all need to indulge and enjoy finer things every now and then.

Who doesn’t love chips, nuts and all the morish foods available on the shelves? I know I do.

One of my favourite snacks are Soya Twists by Samson Foods. These beautifully packaged soya twists (they look like something that would be in an exclusive boutique hotel) come in five unique flavours, with very distinct herbs and spices through them. I have copied the descriptions of the flavours from the Samson Foods website. I wouldn’t copy and paste it if I didn’t believe it was true. I have tasted every one of these and the descriptions are spot on!

Alpine Spice – Enriched with a subtle hint of mint along with the lemon and aniseed myrtle for a bite to excite.

Bush Roast – Infused with lemon myrtle, rosemary and garlic to enhance the savoury roast taste.

Desert BBQ – Enhanced with Australian spices and an aroma of juniper twist.

Mountain Pepper – A burst of a peppery zing for a spicy sensation.

Rainforest Herbs – An infusion of zesty citrus seasoning which is enhanced with chilli notes and sesame seeds.

What makes it even more appetising to me is that the company and ingredients are 100% Australian made and owned, which is something that is quite important to me, obviously depending on what it is we are talking about.

I enjoyed stuffing my face with these soya twists and sharing them around with my friends. They are fresh, rich, they look great and the taste is just explosive – they are exceptional! I’m a little obsessed with them to be honest. Thankfully there are no added colours, artificial flavours and no preservatives. They are also cholesterol free which is great for my defective heart.

London Fashion Week 2010 – Day 1 – Caroline Charles

50’s fun fair was the flavour of the Caroline Charles show, kicking off our London Fashion Week adventures with a step back in time.

The range was compiled of the perfect balance between block colours and prints, in saying this I would have loved to have seen the story board concepting of the range, with most prints getting a look in, including floral, leopard print, herringbone and polkadots.  With a heavy focus on timeless silhouettes, it was hard to not think of Audrey Hepburn films as the sophisticated looks glided past.  The show was another knotch in the belt for the fashion cred of the Mad Men series with it certainly getting a nod from this designer who also featured curvier models on the runway.

Style this look up with a lashing of pearls, elbow length cocktail gloves; white for day and black for night, sinch in that waist with a thin patent leather belt and tuck a large envelope clutch under your arm and pop off to high tea!

Finish the look with a clean fresh face and a dewy red lip.

This showcase of high st attitude was accompanied by a very funky sound track featuring all the cool cats of the era.

A Super Healthy Energy Hit!

When you need an energy boost, packed with happy fats, fibre, natural sugars and heaps of vitamins, you should try this quick dish…

Now you are probably wondering why the 4 ingredients pictured? Well it’s simple. Mash the banana and avacado together with a fork, add a little honey and a small hand full of sunflower seeds (or nuts of your choice).

Seems a little strange? Trust me… It is delicious, sweet, and makes you feel great afterwards. If you like those ingredients, give it a go. You will be addicted!

Maria Venuti – The Mother of Australian Entertainment

Chances are you will hear Maria, before you see her. Then when you see her, you will instantly smile.

Maria Venuti is one of the most outrageously effervescent people I have ever met in my life!

From the giant light brown bouffant that sits on her head, the long eyelashes with diamantes, to the floor length Leopard print kaftan, Maria is one person you are instantly attracted to. Her enormous laugh and hilariousness is infectious – you are then trapped in Mama Venuti’s private little world where everything is about having fun and living life to the fullest.

She is a great Australian icon, performing for thousands of people for longer then most of us have been alive. Her Italian heritage brings out her eccentricity on stage.

Lets get to know this goddess as we are welcomed to the world of Maria Venuti…

What projects are you currently working on or have in the near future?

I’ve just finished filming a movie called ‘Bathing Frankie’ with Henri Szeps, young actor Shaun Goss and first time director, Owen Elliott and writen by the brilliant Michael Winchester.

I’m looking forward to my role in Frank Lotito’s ‘Big Mamma’s Boy’, filmed in Melbourne with Holly Valance in April.

There’s also my first CD in the mix!

I’d love you all to come and see my show at Kit & Kaboodle at The Sugarmill on Sunday night, 21st of March. I guarantee a night of great songs and a fun time!

Who or what influences you most in Fashion and home décor?

Animal print!!

What is your favourite piece of clothing or accessory?

Too much to choose from. But if I have to, my crazy hats!

Do you have one feature in your home you love most?

I have hanging over my fireplace an exotic papyrus of King Tut (Tutankhamen) I bargained for when I was doing concerts in the Sinai Desert with the pride of Australia – Rolf Harris.

What is your greatest extravagance?

Rome…ahh!! Bella Roma!

Greatest lesson learnt?

Be true to yourself… please.

What advice would you give someone if they were thinking of a career in your industry?

Which celebrity wardrobe would you love to raid and why?

I can’t make up my mind between Lady GaGa Or Sophia Loren.

How did you get into a life of performing?

Totally by chance. I’m not a person who plans. Live for today and let life surprise me tomorrow.

What is your one design rule you like to stick to around the home?

Animal print.

My Mother/Father always told me…

Always… just-a-be-a-yourself-Maria. Honest, considerate and passionate.

Is there a cause that is close to you and if so, why?

I love my charity work – it is fulfilling and everything I’m involved with is close to my heart. Like The Variety Children’s Charity, The Cornucopia Committee – raising $’s for the support of abused children. Humpty Dumpty – supporting children’s hospitals. The Australian Ladies Variety Association, it’s a show-business charity that does marvelous work.

Where is your favourite place to relax in Sydney?

Relax?!?! What does that word mean?!! If and when I do, and I’m in the city, my favourite place to take time out is a beautiful small park right next to The Park Hyatt. There are six date palms there and the lorikeets fly around enjoying incessantly chatting and the views are spectacular.

How often do you eat out and cook at home?

I eat out often and cook often. I adore both!

I savour all the different types of foods and experiencing the flavours Sydney’s world class restaurants. My favourite of all is to entertain with dinner parties at home with friends, family, candles and a beautiful interesting theme.

Signature dish?

My daughter Bianca and I were recently in the historic town of Italy’s Peruggia for cooking classes. At the moment I’m loving this very simple dish that Andrea just ‘whipped up’. Veal steak, prosciutto and sage. Hold them together with a large wooden pick, place into very hot extra virgin olive oil for only two minutes and serve with a side of vegetables. I love steamed beans with a combo of oil, mint, garlic – ‘piacere’.

Your thoughts on Australian fashion in comparison to International fashion?

Basically I have my own crazy style, sometimes in the best dressed list, more often then not in ‘the worst dressed list’. But I hope never boring!!!

What frustrates you most about Sydney?

On the Anzac Bridge, the speed limits go from 60 to 40 to 50! Cross City tunnel – 80 to 40!! That’s the problem! The change of speed limits in a few hundred meters! That really frustrates me!

If you were Clover Moore, what would be the first thing you’d inject money into fixing?

Circular Quay railway station and Cahill Expressway! Its hideous and the facade is just an eye sore.

Favourite beach in Sydney and why?

North Bondi gently surfing with friends, then off to North Bondi Italian for lunch and then call into Camilla’s for a new kaftan!!

If you could be a fly on the wall of any celebrity home, who’s wall would you like to sit on?

All my stage costumes are ‘boned to oblivion’. So I once employed a very strong young Darling to do my hooks and eyes up before I went on stage. Ooooooo!

Noble WIne Of The Week – Blue Poles Vineyard

A good friend of mine has a saying that “you don’t make friends with Merlot”. Over time I have found a fair share of people who would agree with that statement, at least to the extent of the bulk of Aussie, 100% Merlot wines. There is, however, always an exception or two to the rule and the Blue Poles 2008 Reserve Merlot is one of those exceptions.

This wine has a lovely deep cherry red  colour but only a very fruit faint aroma that is hiding a rather big fruit flavour. I really enjoyed every last drop of this wine and can say without a doubt it is one of the most enjoyable Merlots I’ve had to date. I can definitely see this wine making friends with both closet Merlot fans as well as its sceptics.

Elliott creates a fusion of futuristic avantgarde fashion, which is creative, seductive, fierce and very risky!

Having been selected for the the Rosemount Australian Fashion Week 2010 in the Innovators category, it’s something that Elliot has embraced and taken on-board to own the show! His show is today which I am pretty keen to seen.

It has been rumoured that it is going to be quite an amazing and quirky show, with alot of interesting concepts. Elliot is most definately going to be someone to keep an eye out for. Having won awards both internationally and right here in Australia, he’s one designer we need to keep on top of.

How To Tell If You’re Drinking From Glass Or Crystal

My mother has always said she prefers to drink from crystal over glass. She seems to think it tastes different and the contents react differently to what’s holding it. I tend to agree with her.

Wrong or right, you’d think you could just fool her and say it is crystal. Wrong.

There are ways you can tell if you are drinking from crystal or glass.

One way to tell is by holding the glass up to a light and seeing if it reflects a prism. If it does, it is crystal. Crystal has a higher index of dispersion and refraction then glass, so any light that passes through the object will separate and bend.

The easiest way to tell is using the tap test. Give the rim of the glass a light flick with your nail to hear what noise it produces. If it’s a high pitched “ping” noise, it means it’s crystal. If it makes a hard noise, like a “plop”, it means it’s glass. There is also the swirling finger test around the rim of the glass. Run your finger around an empty glass and if it makes a high pitch hum, it’s crystal.

For my mother, it comes down to the taste – she can taste if it’s crystal or glass! Now that’s a trick I think would take a long time to perfect.

Where Would I Rather Be?

Where would I rather be? I’d rather be at the ICEHOTEL in Jukkasjärvi, Sweden.

As it’s getting cool here in Sydney, why not just go the whole way and go to -5° to -8° temperatures. But be quick, the hotel starts to wrap things up at the end of April as the sun comes up at midnight and begins to melt the ice away. A very unique part of the world, where you remain in darkness for a part of the year, then remain in full sun, day and night, for 100 days straight. There’s no inbetween.

ICEHOTEL offers a very unique experience, incorporating art, nature, gastronomy and accommodation. As the name suggests, there is ice involved. But not just bits of ice here and there, the entire constuction is made of ice and snow, including beds, sculptures and chairs.

There are different types of accommodation you can choose from too. There is cold and warm accommodation. ou can stay in a warm cabin, or you can go for the cold accommodation, which are the suites constructed of ice.

Cold accommodation has a Snow Room, Ice Room, Art Suite or Deluxe Suite, all providing the same experience, just different levels of luxury and privacy. Natuarally I will take the Deluxe Suite!

Ice sculptures and artworks throughout the suite, it’s spacious and you are constantly in awe. What do you sleep on? Well ice of course! There are blocks of ice to construct a base, then a thick mattress, then reindeer skins, then a thermal sleeping bag.

In the morning you will be woken by a cup of hot lingonberry juice at your bedside. When you wake up, go for a morning sauna then a scrumptous buffet breakfast.

The Deluxe Suite is around AUD$1100 for the night, which for such an amazing experience is very little to pay.

I just can’t get enough of the photos, it just looks so amazing, words cannot even describe!

Pop Music At It’s Best With Simon Curtis

I stumbled apon this AMAZING talent only a few days ago. His name is Simon Curtis.

I got the album 8Bit Heart and put on the first song which is the introduction, BoyRobot. Second song, Don’t Wanna Be Alone sets you in a mood. After the introduction drops you in Simon’s electronic world, my initial thought was he sounded very much like Darren Hayes when he went solo after Savage Garden. The voice, the sound, the tempo and everything about it is very similiar to This Delicate Thing We’ve Made. This is most certainly not a bad thing, as Darren created one of the best stories ever told on this album.

But back to Simon, his voice is clear, pure and cheeky. The American singer has so much fun throughout the album. He is so real and oozes cool. He talks and relaxes through it, like he was in the room, and it’s not dramatic – it’s real. The sounds are very electronic and very familiar. Sounds that you hear in day to day life pop up at the most unexpected times, but blend in almost perfectly.

His unique style and presence is almost that of Sam Sparro, but better. He is charasmatic and you can hear it through the speakers.
